El Dorado Casserole

I know it is hard to think about Fall with the Summer heat still looming, but I am so ready. Dreaming about Fall and cooler weather has got me craving comfort food.  One of my long time favorite comfort foods is Eldorado Casserole.  My family has made this for years.  It is very similar to tamale pie.

I am not a very good food photographer, so imagine it looks better in person.  This casserole is also great the next day.  It warms up very well.


EL Dorado Casserole

2 lbs. Ground Beef (I use ground turkey)
1 onion chopped
1tsp garlic salt
2 8oz cans tomato sauce
4 oz sliced olives
1 cup sour cream
1 cup small-curd cottage cheese
2 cans diced green chilies
1 pkg. Doritos
2 cups grated cheese of your choice


Cook ground beef until brown and crumbly.  Sauté onions in same pan, drain off excess fat.

Add garlic salt, tomato sauce, olives and heat until bubbly.

Combine sour cream, cottage cheese, and chilis.

Crush Doritos.  Butter casserole dish.

I put just a little of the meat sauce on the bottom and spread it around, but your layers will be 1/2 of the chips, 1/2 the meat, 1/2 cream mixture, and 1/2 the cheese. Repeat.

Bake uncovered for 35-45 minutes at 350 degrees until hot.
