Red Neck Spanish Rice

I am so excited to share this recipe with you today.   It is simple and delish and only has a few ingredients.

My mom created this recipe some 40 years ago.  I asked her where she got the recipe from or what was her inspiration, she really can’t remember.  Growing up we ate a lot of rice dishes because my dad was a rice farmer.

Friends and family request this dish all the time.  Hands down, it’s a crowd pleaser.

It is a great side dish to accompany mexican food or BBQ.  If you wanted to make it a main dish you could add shredded chicken.

Instructions
  1. Heat oven to 350 degrees.
  2. Grease a 9 X 13 dish.
  3. Bake covered for 30 mins. If you want the top to get golden brown, remove foil after the 30 mins and cook for 10 mins more.

My friend made these napkin rings out of upholstery binding.  They are cute, easy, and inexpensive .
